10 āCā size red potatoes, cooked and cubed
6 pieces of center-cut bacon, cooked and crumbled
1 c. low-fat cheddar cheese, cubed
1 c. low-fat sharp cheddar cheese, shredded
1 bunch green onions, diced
1/4 c. real mayonnaise
1/4 c. low-fat sour cream
1 t. minced chives
1 t. garlic powder
salt & pepper to taste
In a large bowl, combine potatoes and bacon.
In another bowl, combine the remaining ingredients; add to potato mixture and toss gently to coat.
Transfer to a greased 9 x 13 x 2 inch baking dish.
Bake, uncovered at 325 degrees for 50-60 minutes or until bubbly and lightly browned.
