1/4 c. unsweetened applesauce
2 Tbls. canola oil
2 eggs
1/3 c. water
1 c. canned pumpkin
1 c. white sugar
1 c. whole wheat pastry flour (Bob's Red Mill)
2/3 c. all-purpose unbleached white flour
1/2 t. baking powder
1 t. baking soda
1 t. cinnamon
1/2 t. salt
1/2 t. ground cloves
1/2 c. chopped walnuts
Combine applesauce, oil, water, eggs, pumpkin and sugar.
Stir in remaining dry ingredients until moistened. Fold in walnuts. Spoon batter into a large greased and floured loaf pan. Also makes 3 mini loaves instead.
Bake at 350 degrees for about 50-60 minutes; about 35-40 minutes for mini-loaf pans.
Cool for 15 minutes before removing from pan to wire rack.
