Oven Pancake: Puffy Cherry

You can double this recipe and make in a 12-inch oven proof skillet.




Ingredients
- 2 Tbls. butter
- 2 Tbls. brown sugar
- 1/4 t. cinnamon
- 1/2 c. dried cherries
- 2 large eggs
- 1/2 c. unbleached all-purpose white flour
- 1/2 c. milk
- 1/4 t. salt
- Syrup or powdered sugar for serving
Instructions
Melt butter in 9” pie plate in oven at 400 degrees. Brush butter on side of pie plate.
Mix brown sugar and cinnamon and sprinkle evenly over melted butter.
Arrange 1/2 cup dried cherries over sugar.
In a medium bowl, beat eggs slightly with wire whisk or hand mixer. Mix in flour, milk and salt.
Pour batter over cherries.
Bake at 400 degrees for 25-30 minutes.
Immediately loosen edge of pancake and turn upside down.
Cut and serve with syrup (regular or Cherry De-Lite Cherry) or sprinkle with powdered sugar.
