This is an energy packed, slow release breakfast!
1/2 c. rolled oats
1 4 c. quinoa (white)
1/4 c. raisins
1/4 c. almond meal (see note)
1/4 c. flaxseed meal
1 small apple, chopped
2-1/2 to 3 t. ground cinnamon
1-3/4 c. water
1/4 c. chopped walnuts
brown sugar, for serving
extra milk, for serving
Combine oats, quinoa, raisins, almond meal, flaxseed, apple and cinnamon in a medium pot; add water.
Bring mixture to a boil, stirring regularly; reduce heat and simmer until oats are tender and liquid is absorbed (about 10 minutes).
Serve with chopped walnuts, a little brown sugar for sweetness (if desired) and a drizzle of milk.
Refrigerate leftovers. Heat in microwave to warm.
