Perfect served with my Southwestern Potato Gratin
approximately 3 lb. boneless pork loin roast
1/3 c. jalapeno pepper jelly, warmed (see note)
1/2 t. chili powder
1/2 t. ground cumin
1/2 t. salt
1/4 t. garlic powder
1/4 t. ground cinnamon
1/8 t. black pepper
Preheat oven to 350 degrees. In a bowl, combine spice ingredients; rub over pork. Place pork in a roasting pan. Roast until meat thermometer inserted into thickets part of pork registers 170 degrees (about 1-1/2 – 2 hours).
Brush with wamred jelly during the last 20 minutes of cooking time. Let stand 10 minutes before slicing.
