So easy and full of flavor.
1 large pizza crust homemade or store-bought
cornmeal for pan
4 Tbls. olive oil
4 cloves garlic, minced
4-5 oz. chicken breast, cut into 1/2-inch pieces
1/2 t. dried oregano
1/4 t. dried basil
1/4 t. garlic powder
1/8 t. dried marjoram
pinch dried rosemary
pinch salt and pepper
3 c. mozzarella cheese, shredded
3 oz. (1/4 c.) low-fat feta cheese, crumbled
2 oz. (1/3 c.) sun dried tomatoes, chopped
handful fresh spinach, large leaves torn
dried oregano basil, and marjoram for topping pizza
red pepper flakes, when serving, if desired
Drizzle olive oil in a medium skillet, over medium heat. Add garlic and cook until golden, about 2 minutes. Pour oil and garlic into a small bowl and set aside.
Return pan to medium heat. Add a little olive oil, if needed, and add the chicken, oregano, basil, garlic powder, marjoram, rosemary, salt, and pepper. Cook, stirring often, until chicken is golden and heated through. Remove any excess fat and set aside.
Preheat oven to 450 degrees.
Sprinkle a pizza pan (or pizza stone) with a dusting of cornmeal.
If using homemade pizza dough transfer to pizza pan or stone and press out with your fingers to cover all.
Brush the garlic olive oil over the crust.
Add a layer of 2 cups mozzarella.
Sprinkle with chicken, feta, sun dried tomatoes, and fresh spinach.
Top with remaining mozzarella and a pinch of dried oregano, basil, and marjoram.
Bake in preheated oven until crust is golden and cheese is bubbly, about 12-15 minutes (or longer for thicker crust) until cheese is bubbly on top.
Let cool for about 5 minutes before slicing. Add red pepper flakes, if desired.
