A lot of flavor for so little ingredients.
The cilantro really adds flavor to this soup, be generous.
1 lb. lean ground beef
1 onion, chopped
2 cloves garlic, minced
3 c. low sodium beef broth (Kitchen Basics)
2 (15 oz.) cans pinto beans, drained and rinsed
1 chopped roma tomato, optional
1 can (4 oz) green chilies, diced
1 teaspoon cumin
1 teaspoon chili powder
salt and pepper to taste
fresh cilantro, garnish
In a large pot, heat olive oil over medium heat. Add the ground beef and chopped onion and cook until browned, breaking it apart as it cooks. Add garlic and cook for 5 minutes more minutes to soften.
Stir in the green chilies, cumin, chili powder, your spices, and pepper.
Add the broth, pinto beans and chopped tomato if using; bring the soup to a simmer.
Cook for 20-25 minutes to blend the flavors.
Garnish with fresh cilantro and serve hot.
