Pineapple Coconut Banana Bread

Very moist and delicous

Ingredients
  • ½ c. butter, softened

  • 1 c. white sugar

  • 2 eggs

  • ½ c. mashed ripe banana

  • 1/3 c. crushed pineapple

  • ½ c. flaked coconut

  • 2 c. unbleached white all-purpose flour

  • 1 t. baking powder

  • ½ t. baking soda

  • ½ t. salt

  • 1/2 c. chopped macadamia nuts, optional

Instructions

In a bowl, cream butter and sugar. Beat in eggs.

Stir in banana, pineapple and coconut.

Combined dry ingredients; stir into creamed mixture just until combined. Fold in nuts, if using.

Spoon into a greased and floured 8x4-inch loaf pan or (3) mini loaf pans.

Bake at 350 degrees for 55-65 minutes. If using mini loaf pans only bake about 40 minutes.

Cool in pan for 10 minutes; remove to wire rack to cool.
