½ c. butter, softened
1 c. white sugar
4 eggs
5 slices good quality white bread, cut into 1-inch cubes (French, Italian, sour dough)
20 oz. can crushed pineapple, drained
1/3 c. brown sugar, packed
vanilla ice cream
whipped cream or Tru Whip
Greek Pineapple Yogurt (Chobani)
Grease a 6 x 10-nch baking dish and set aside.
In a large mixing bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time.
Stir in the bread cubes and crushed pineapple until well blended.
Pour mixture into prepared baking dish. Sprinkle brown sugar evenly over top.
Bake at 350 degrees for 45-60 minutes, until bread tips on top are golden brown.
Cool before serving (or eat a little warm, if you prefer).
