romaine lettuce, cleaned and broken up (for 8-10 people)
3/4 c. lightly salted cashews
1 granny smith apple, unpeeled, cut up fine
1 pear, unpeeled, cut up fine
1 c. Craisins or dried cranberries
1 c. mozzarella cheese, finely shredded
1/4 c. white sugar
1/3 c. fresh lemon juice
2 t. grated onion
1 t. poppy seeds
1 t. honey mustard
1/2 t. salt
2/3 c. canola oil
1/2 c. white sugar

There are 2 dressing choices. Make dressing the night before. Put all ingredients in a small food processor and blend well for a couple of seconds. You will have leftover dressing, but it will keep about a week in the refrigerator.
To assemble salad, combine lettuce, cashews, apple, pear, dried cranberries and cheese. Pour dressing over all and toss to coat.
