1/2 c. butter, softened
1/2 c. peanut butter
1/2 c. white sugar
1/2 c. brown sugar
1 egg
1 t. vanilla
1-3/4 c. unbleached all-purpose white flour
1 t. baking soda
1/2 t. salt
1 bag of chocolate kisses (I like dark chocolate)
extra white sugar to roll dough balls in
In a large bowl, cream together butter, peanut butter, sugars, egg and vanilla.
By hand, stir in dry ingredients.
Roll into balls and place in a seals container; refrigerate dough balls a few hours before baking.
When ready to bake, dip each ball in white sugar..
Place on ungreased cookie sheets and bake at 350 degrees for 8-10 minutes (until flattened and cracked a bit).
Open oven door and pull out oven rack and press a chocolate kiss onto each cookie and continue baking 2-3 minutes until cookies are done.
Cool on wire racks lined with paper towel to absorb the grease.
