1/2 c. butter
3/4 c. white sugar
1 egg (room temp.)
1 t. vanilla
1/2 c. plain yogurt or low-fat sour cream
1-1/2 t. baking powder
1-1/2 c. all-purpose unbleached white flour
1 c. diced peaches, (if using canned, drained well)
1 c. chopped pecans, optional
Mix butter, sugar, egg, vanilla and yogurt or sour cream.
Stir in dry ingredients.
Spoon into greased or paper lined muffin cups until 2/3 full.
Bake at 400 degrees for 20-25 minutes. Remove to wire rack.
