Just like eating dessert for breakfast, and it is healthy!
The flavor combo is amazing.
Overnight oats are a popular breakfast in Switzerland.
They were created by Dr. Maximillian Bircher for his patients in Zurich because it helps to slow digestion and feel fuller, longer.
1 c. rolled or old fashioned oats (not instant or quick cook)
1 cup vanilla almond milk (regular milk is fine)
1-1/2 t. chia seeds
1/2 t. vanilla (if not using vanilla almond milk)
2 Tbls. Greek yogurt (plain, vanilla or banana)
2-3 Tbls. peanut butter, divided
1 banana, sliced
2 Tbls unsweetened coconut flakes, divided among each serving
2 Tbls. mini dark chocolate chips, divided among each serving
Mix the oats, milk, and chia seeds in a container jar or bowl and cover. Put in the refrigerator overnight.
In the morning mix in the Greek yogurt, and 2 tablespoon of peanut butter.
Top with the remaining peanut butter (about 1 teaspoon per serving), sliced banana, coconut flakes, and mini chocolate chips.
Makes 2-3 servings
