4 baking potatoes (I like 4 large Yukon Golds)
2 Tbls. butter
2 Tbls. olive or canola oil
1 t. paprika
salt and pepper to taste
onion powder and garlic salt, to taste (optional)
Melt butter; add oil, paprika, (or chili powder) salt and pepper, garlic and onion powder if using and set aside.
Peel potatoes and cut into chunks.
Place in a shallow 2 qt. baking dish. Pour butter/oil mixture over potatoes and toss to coat.
Bake at 400 degrees, uncovered 45-60 minutes.
