Oriental Wild Rice with Dried Cherries

Great side dish for an Oriental main course

Ingredients
  • 1 c. fresh snow peas, halved

  • 1 c. cooked wild rice

  • 1/2 c. cooked long grain brown rice

  • 1/2 of a small can of sliced water chestnuts

  • 1/2 c. dried cherries

  • 1/4 c. thinly sliced celery

  • 1/8 c. sliced green onions

  • 1/2 c. cashews, toasted

Dressing
  • 3 Tbls. white sugar

  • 1-1/2 Tbls. cider vinegar

  • 2-1/4 t. Kikkoman low-sodium light soy sauce

  • 1 garlic clove, minced

  • 1/4 - 1/2 t. minced fresh ginger root

  • 3 Tbls. canola oil

Instructions

In a large bowl, combine snow peas, rice, water chestnuts, cherries, celery and green onions.

For dressing, combine the ingredients and process a couple of seconds in a food processor until blended. Pour over rice mixture and toss to coat.

Cover and refrigerate until serving. Just before serving, stir in cashews.

NOTE: Serves 2-4; double this recipe to serve 4-6
