2 chicken breasts, grilled and cut into small pieces
½ - ¾ c. cashews
3 Tbls. sliced green onions
1 Tbls. chopped fresh parsley, optional
1 clove garlic, minced
2 Tbls. low sodium soy sauce (Kikkoman)
½ t. fresh ginger, chopped fine
8 oz. pkg. low fat cream cheese, softened
1 Tbls. milk
Crackers (of your choice)
1/8 c. brown sugar
1 t. cornstarch
½ c. water
1/8 c. (2 Tbls.) ketchup
1 Tbls. white vinegar
½ Tbls. Worcestershire sauce
2 drops hot pepper sauce
Combine chicken, cashews, green onions, parsley, garlic, soy sauce and ginger; mix well and chill several hours or overnight.
Sauce: Combine all sauce ingredients and boil approximately 4 minutes until thicken. Chill until read to assemble.
Base: When ready to assemble, blend cream cheese and milk; spread softened cream cheese mixture onto a 10-inch round plate or platter.
Layer chicken mixture on top of cream cheese. Drizzle sauce on top and serve with crackers.
