2 c. old-fashioned oats
1 t. baking powder
1/2 t. salt
1-3/4 c. milk
1/3 c. brown sugar
2 eggs
3 Tbls. melted butter
1 to 1-1/2 t. pure vanilla (your preference)
1/2 c. fresh raspberries
1/3 c. white (or chocolate) baking chips
slivered almonds for garnish, if desired.
In a medium-large bowl, stir together oats, baking powder and salt.
Add milk, sugar, eggs, butter and vanilla. Mix with an electric hand mixer until an even batter forms.
Pour into a greased 9x9-inch baking dish (or equivalent size).
Sprinkle fresh raspberries and white chocolate chips on top of batter.
Bake for 40 minutes at 375 degrees, or until golden brown.
Serve with additional raspberries, if desired.
