1 c. butter, softened
1 c. brown sugar
1/2 c. white sugar
2 eggs
1 t. vanilla
1-1/2 c. unbleached all-purpose white flour
1 t. baking soda
1/2 t. salt
2-3/4 c. To 3 c. dry old-fashioned oatmeal
1 t. cinnamon
1/4 t. nutmeg
1 c. Dole raisins
1/2 c. chopped walnuts, optional
cinnamon baking chips, see Note
In a large bowl, with an electric hand held (or stand) mixer, cream together butter and sugars until light and fluffy. Add eggs one at a time and vanilla; mix until blended.
By hand, stir in oatmeal and dry ingredients. Fold in raisins and nuts, if desired..
Refrigerate dough a couple of hours before baking.
Drop by level teaspoons onto ungreased cookie sheets and bake at 350 degrees for about 10-12 minutes or until lightly browned.
Cool on wire racks lined with paper towel to absorb the grease.
