2 c. old fashioned oatmeal (not instant)
1/2 t. salt
1/2 t. ground cinnamon
1/8 t. ground nutmeg
3 Tbls. white sugar
1-3/4 c. water
1-3/4 c. milk
1 c. peaches, diced (frozen, canned or fresh peeled)
additional milk or cream
brown sugar,if desired
chopped pecans, roasted (optional)
Thaw peaches if using frozen. If using canned, drain juice.
Add diced peaches, oats, salt, cinnamon, nutmeg, sugar, water and milk in a bowl; mix together. Transfer to a greased (spray with cooking spray) 2-1/2 quart casserole dish.
Bake in oven at 350 degrees for 50-55 minutes or until thickened. Stir 2-3 times while baking.
Remove from oven and spoon into 4 bowls. Top with a little brown sugar, milk or cream and pecans if desired.
