2 c. uncooked mostaccioli or large tube pasta
1 medium cucumber, thinly sliced
1 small yellow squash, quartered and sliced
1 small zucchini, halved and sliced
sliced mushroom to your liking
1/2 c. diced sweet red pepper
1/2 c. diced green pepper
1/2 c. sliced ripe black olives
3-4 green onions, chopped
1/3 c. white sugar
1/3 c. white wine vinegar
1/3 c. canola oil
1-1/2 t. prepared mustard
3/4 t. dried minced onion
3/4 t. garlic powder
1/2 t. salt
1/2 t. pepper
Cook pasta according to package directions.
Drain and rinse in cold water. Place in a large bowl; add cucumbers, squash, zucchini, mushrooms, peppers, olives and onions.
Mix dressing ingredients and process in a mini-food processor for a few seconds until blended.
Pour dressing over pasta and veggies and refrigerate a couple hours until ready to serve.
