Mexican Chopped Salad with Honey-Lime Dressing
Ingredients
  • 2-1/2 c. chopped romaine lettuce

  • 1/4 c. reduced-fat feta cheese, crumbled

  • 15.5 oz. can black beans, rinsed & drained

  • 3/4 c. chopped seeded tomato

  • 3/4 c. chopped peeled jicama

  • 3/4 c. frozen corn, thawed and uncooked

  • 1/2 c. thinly sliced radishes

  • 1 ripe avocado, diced

  • small red pepper, chopped

Honey-Lime Dressing
  • 1/4 c. fresh lime juice

  • 1/4 c. olive oil

  • 2 Tbls. honey

  • 2 Tbls. finely chopped fresh cilantro

  • 1 garlic clove, peeled and minced

  • 1 t. chopped jalapeno pepper

Instructions

Mix dressing ingredients with an emulsion mixer (or mini food processor) for a few seconds.

Assemble salad ingredients and pour dressing over all; toss to mix.

NOTE: Serves 6-8
