2-1/2 c. chopped romaine lettuce
1/4 c. reduced-fat feta cheese, crumbled
15.5 oz. can black beans, rinsed & drained
3/4 c. chopped seeded tomato
3/4 c. chopped peeled jicama
3/4 c. frozen corn, thawed and uncooked
1/2 c. thinly sliced radishes
1 ripe avocado, diced
small red pepper, chopped
1/4 c. fresh lime juice
1/4 c. olive oil
2 Tbls. honey
2 Tbls. finely chopped fresh cilantro
1 garlic clove, peeled and minced
1 t. chopped jalapeno pepper
Mix dressing ingredients with an emulsion mixer (or mini food processor) for a few seconds.
Assemble salad ingredients and pour dressing over all; toss to mix.
