2-1/2 lbs. Yukon gold potatoes
4 Tbls. butter
milk or half & half
1/2 c. Asiago cheese, shredded
1/4 t. garlic powder
Peel and dice potatoes. In a large saucepan, boil for approximately 30-40 minutes, or until tender. Drain (see note below).
Mash potatoes with a potato masher until broken up; add butter and milk (or half & half) until desired consistency, and mix with a hand mixer (or a standalone mixer) until smooth.
Blend in Asiago cheese and garlic powder; mix until smooth.
