Perfect in Fall and throughout Winter!
mixed greens for 6 people
thinly sliced red onion
dried cranberries, dried cherries or raisins
sliced pear or chopped apple
toasted pecans or walnuts
crumbled Gorgonzola or goat cheese
6 Tbls. extra-virgin olive oil
ΒΌ c. good quality balsamic vinegar (18 - 25 yr.)
2 Tbls. + 2 t. pure maple syrup
small garlic clove, minced
1/8 t. hot pepper sauce
1/8 t. salt
1/8 t. coarse black pepper
Put all dressing ingredients in a small blender; cover and blend until emulsified and creamy. Transfer to a jar; store in refrigerator. Shake before using.
TO ASSEMBLE SALAD: In a salad bowl, add greens, red onion and berries, fruit, nuts and cheese of your choice. Combination ideas below.
Combo #1: Use dried cranberries or cherries, pear, pecans and Gorgonzola cheese
Combo #2: Use dried cranberries or raisins, apple, walnuts and goat cheese.
