26 oz. jar of pasta sauce (use two -16 oz. jars for more sauce)
2 bags frozen large cheese ravioli, (Rosetto brand in frozen food section)
10-oz box frozen chopped spinach, thawed and squeezed of excess water (use a Ricer to squeeze water out, break up with a fork)
2 c. low fat mozzarella cheese, shredded
1/2 cup grated Parmesan cheese
Heat oven to 350 degrees. Coat a 13-by-9-inch baking dish with cooking spray and spoon a thin layer of sauce on the bottom.
On top of sauce, layer 1/3 of the ravioli, half the spinach, half the mozzarella and 1/3 of the sauce. REPEAT.
Top with the remaining 1/3 of the ravioli and sauce. Sprinkle with Parmesan.
Cover with foil and bake 30 minutes. Uncover and bake 5 to 10 minutes more or until bubbly.
