1-1/4 to 1-1/2 c. crushed graham crackers (or butter cookies)
1/3 c. melted butter
2 Tbls. sugar (optional)
Whipped cream or Cool Whip for garnish
3 large egg yolks only
14 oz. can sweetened condensed milk
5 Tbls. fresh lime juice
5 Tbls. fresh lemon juice
1 t. finely grated lime peel, optional
Mix crumbs, butter and sugar (if using). Press firmly against bottom and side of 9-inch pie plate.
Filling: In a mixing bowl, beat egg yolks and milk at high speed with an electric mixer until light and fluffy (about 5 minutes). Beat in lime and lemon juices along with peel if desired.
Pour mixture into crust. Bake at 350 degrees for 6 to 8 minutes or until filling is set. Remove from oven and cool completely.
Cut into wedges and top with a dollop of whipped cream or Cool Whip topping and serve.
