Kahlua Bundt Cake

Ingredients
  • 1 pkg. yellow cake mix

  • 1 small pkg. vanilla instant pudding (4 serving size)

  • 1 c. low-fat sour cream

  • 4 eggs

  • 3/4 c. canola oil

  • 1 t. vanilla

Filling
  • 1 c. brown sugar

  • 1/2 c. Kahlua liqueur

  • 3/4 c. chopped pecans

Instructions

In a mixing bowl, using an electric mixer, mix half of cake mix with the above ingredients. Batter will be thick. Gradually stir in the rest of the cake mix. Divide 2/3 into one bowl (yellow batter) and the other 1/3 (batter) into another bowl.

Add the filling ingredients to the bowl with 1/3 of the batter.

Grease bundt pan and pour in half of the yellow batter. Spoon on the dark cake batter; and top with the remaining yellow batter. Swirl with a knife.

Bake at 350 degrees for 1 hour and 15 minutes. Cool in pan for about 10 minutes. Invert onto a serving platter or cake holder and sprinkle with powdered sugar.

Optional Glaze: Mix 1 Tbls. Kahlua, 1 Tbls. cream de cocoa & 1 cup powdered sugar and drizzle over cake.
