olive oil for the pan and grilling
1 c. finely chopped red onion
1/2 c. (about 4 ounces) finely chopped jalapeño peppers, seeds removed
2 t. garlic, minced
1 lb. ground turkey (93% for less fat, 85% for more fat)
1 c. pepper Jack cheese, grated
1 t. kosher salt (or ½ teaspoon table salt)
1 t. ground cumin
a few turns of freshly ground black pepper
buns for serving (4 or 5)
2 ripe avocados
3 Tbls. red onion, chopped
2 cloves garlic, minced
1 medium roma tomato, chopped
2 Tbls. fresh lime juice
1/4. cumin
kosher salt and pepper, to taste
dash of hot sauce, optional
fresh cilantro, chopped
Sauté Onion, Peppers and Garlic: Coat the bottom of a medium-large sauté pan with olive oil and place it over medium heat. Add the onion, jalapeños and garlic; sauté until the onions are soft, about 5 minutes. Set aside to cool to room temperature.
Combine Remaining Ingredients: Once the onion mixture has cooled, in a large mixing bowl, combine it with the turkey, cheese, salt, cumin and pepper. Use a large mixing spoon or your hands (if necessary) to blend all ingredients together so they are evenly distributed.
Shape the turkey mixture into 4 or 5 evenly sized burgers. Place on a platter or large plate, cover with saran wrap and refrigerate for several hours. That will make them easier to grill and hold their shape.
Grill. Preheat grill or a stove-top grill. Drizzle each burger with a little oil and use your hands to gently rub it evenly over the surface.
When the grill is very hot, add the burgers. You should hear a sizzling sound — if you don’t, wait until you do! Grill until the bottoms are nicely marked (about 4 minutes), then flip them over and reduce the heat to medium-low. Continue grilling just until the turkey is cooked through, about another 6 minutes.
Place the cooked burgers on a plate and cover with foil until you're ready to serve.
Serve on buns with a dollop of Guacamole or your favorite toppings (tomato slice, slice of red onion, lettuce or any add-ons you want).
GUACAMOLE: Cut avocados in half, remove the pit and scoop out the flesh into a mixing bowl. Using a fork, mash them to your desired level of creaminess (smooth or chunky).
Stir in chopped onion, minced garlic, diced tomato, lime juice, cumin, a little chopped cilantro and hot sauce, if using.
Season with salt and pepper to ta taste. Adjust lime juice and seasonings to your preference.
Place a dollop on top of each burger.
