Simply delicious! Even if you don't like Kale, you'll love this salad.
4 c. thinly sliced fresh kale (or other greens if you prefer)
¼ c. slivered almonds, toasted
¼ c. dried currants
2 Tbls. Asiago cheese
1 Tbls. good balsamic vinegar
1 Tbls. olive oil
1-1/2 t. honey
¾ t. coarsely ground pepper
½ t. sea salt
Place kale, almonds and currants in a large bowl.
In a small bowl, whisk Asiago, balsamic, olive oil, honey, pepper and salt until blended.
Drizzle dressing over salad; toss to coat.
