2 Tbls. butter (or use butter olive oil)
¼ c. onion, diced
½ to 1 c. bell peppers, diced (variety of green, red, orange or yellow)
6 large eggs
kosher salt, to taste
freshly ground black pepper, to taste
3/4 c. shredded Swiss cheese (or your choice)
1 c. baby spinach, stems removed (optional)
12 thin slices Virginia baked ham (from Deli)
In a large nonstick skillet over medium heat, melt butter, and add onions and peppers. Sauté on until onions are browned and translucent.
In a large bowl, crack eggs; add salt and pepper and whisk to blend.
Add egg mixture to peppers and onions. Scramble eggs, stirring occasionally for about 3 minutes. Stir in cheese until melted.
Stir in baby spinach, if using, and cook just until spinach is wilted.
On a cutting board or prep mat, place two slices of ham. Top with a big spoonful of scrambled eggs mixture and roll up. Repeat with remaining ham and scrambled eggs.
Place roll-ups in a shallow baking dish and broil until ham is crispy, about 5 minutes.
