1 haddock fillet (Icelandic brand)
2 Tbls. extra-virgin olive oil
6.5 oz. jar marinated artichoke hearts (Mezzetta brand), do not drain
1 Tbls. dried basil
garlic salt and freshly ground pepper, to taste
1 c. cherry or grape tomatoes, optional (adds color and added flavor to this dish)
Heat oven to 400 degrees.
Place haddock in a lightly greased ovenproof baking dish, brush with oil, and sprinkle with basil, garlic salt and pepper.
Arrange artichoke hearts around fish and drizzle with artichoke liquid.
If using tomatoes, add the last 10 minutes of baking time.
Bake about 25-30 minutes or until fish is opaque and flakes with a fork. Remove from oven and serve hot.
Can also grill using a foil pan. Grill for about 20 minutes.
