Gingerbread Cake
Gingerbread Cake

Serve warm with either whipped cream or vanilla ice cream.
Super moist cake. Perfect dessert for the Christmas holidays.

Ingredients
  • 1/2 c. butter

  • 1 c. brown sugar

  • 2 eggs

  • 1/2 c. dark molasses

  • 1/2 c. boiling water

  • 2 c. all-purpose unbleached white flour

  • 1 t. baking soda

  • 1/2 t. salt

  • 1 t. cinnamon

  • 1-1/2 t. ground ginger

  • 8 oz. container of Truwhip (a healthier version of Cool Whip) or vanilla ice cream, optional for serving

Instructions

Cream butter until fluffy; add sugar. Beat in eggs one at a time. In separate bowl, combine dry ingredients and set aside.

Stir together boiling water and molasses and add to the butter-egg mixture alternately with the dry ingredients. Mix well.

Pour into a greased and floured 8 x 12 pan and bake at 350 degrees about 35-40 minutes or until done.

Serve warm with Truwhip or vanilla ice cream. Warm leftover pieces in the microwave.

NOTE: You can also make homemade whipped cream instead of store bought.
