1 c. all-purpose unbleached white flour
1/4 c. powdered sugar
1/2 c. cold butter
8 oz. pkg. low fat cream cheese
1 t. vanilla extract
1/3 c. white sugar
5 t. cornstarch
1-1/4 c. unsweetened pineapple juice
1 t. lemon juice
blueberries
strawberries
raspberries
bananas
peaches
grapes
pineapple
kiwi
mandarin oranges
In a large bowl, combine flour and powdered sugar; cut in butter until crumbly. Press onto an ungreased 12-inch pizza pan.
Bake at 350 degrees for 10-12 minutes. Cool.
Mix cream cheese, vanilla extract and white sugar. Spread over crust.
Top with assorted fruit of your choice.
In a small saucepan, combine the cornstarch, pineapple juice and lemon juice until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool and drizzle over fruit; refrigerate until ready to serve.
