Serve over rice or cauliflower rice
Quick and easy meal.
1 lb. ground pork (can substitute with ground chicken, turkey, or beef)
1 sweet onion, diced
1 Tbls sesame oil
1 Tbls. rice vinegar
2 t. minced fresh garlic
1 t. ground ginger (or 4 t. fresh ginger)
1/4 c. low sodium soy sauce (Kikkoman)
1 Tbls. hoisin sauce
1 (16 oz.) bag coleslaw mix - rinsed and dried (or 1 small shredded cabbage & 1/2 c. grated carrots)
2 green onions, thinly sliced
salt and pepper, to taste
1/2 c. mayonnaise (Hellman's)
1 Tbls. sriracha
zest from half a lime
juice from half a lime
Brown meat with diced onion, on medium high heat. Drain grease.
Add sesame oil, rice vinegar, garlic, ginger, soy sauce, hoisin sauce and stir to mix; cook for 1-2 minutes.
Fold in coleslaw (or cabbage and carrots). Cook, stirring, until cabbage is wilted, about 6-7 minutes.
Add green onions, salt and pepper to taste.
Serve over rice or cauliflower rice with a drizzle of spicy aioli sauce on top.
Aioli Sauce: Mix ingredients together and stir until smooth. Refrigerate if making ahead.
