1 c. butter
1 c. packed brown sugar
1/2 c. white sugar
2 eggs
1 t. vanilla
3/4 c. whole wheat pastry flour
3/4 c. all-purpose unbleached white flour
3 c. quick-cook oatmeal
1 t. cinnamon
1 t. baking soda
8 oz. pkg. chopped dates
2 oz. pkg. chopped walnuts (2/3 cup)
With an electric mixer, cream butter; add white and brown sugars. Add eggs and vanilla and combine well.
By hand, stir in flours, oatmeal, cinnamon and baking soda; stir in dates and walnuts and mix well.
Refrigerate dough for several hours.
Drop dough by rounded tablespoons, 2 inches apart, onto ungreased cookies sheets.
Bake 11-12 minutes at 350 degrees or until golden brown.
Cool cookies on wire racks lined with paper towel to absorb the grease.
