Creamy Cauliflower Salad
Ingredients
  • 1 small onion, chopped

  • 4 c. raw cauliflower

  • 1 raw carrot, sliced

  • 8 slices center-cut bacon, fried and crumbled

  • 1/4 t. dill weed, if desired

Dressing
  • 1 c. light mayonnaise

  • 1/2 c. light sour cream

  • 2 Tbls. milk

  • 3 Tbls. white vinegar

  • 1/2 c. white sugar

Instructions

Cut up vegetables, onion, cauliflower and carrot.

Mix mayonnaise, sour cream, milk, vinegar and sugar.

Add vegetables to mixture; add dill weed if using and refrigerate at least two hours.

Add bacon just before serving.

NOTE: You can also use 2 cups of cauliflower and 2 cups of broccoli for a more colorful salad, rather than using all cauliflower.
