Cranberry / Pineapple Upside Down Cake
Ingredients
  • 1/2 c. melted butter

  • 1 c. brown sugar

  • 1 c. fresh or frozen cranberries

  • 1/2 c. chopped nuts

  • 20 oz. can pineapple tidbits, drained – Save Juice

  • 1 pkg. yellow cake mix

  • 3 eggs

  • 1-1/4 c. pineapple juice

  • 1/4 c. canola oil

Instructions

Pour melted butter into a 9 x 13-inch baking pan. Sprinkle with brown sugar, cranberries, nuts and pineapple.

In a mixing bowl, using an electric mixer, mix cake mix with eggs, oil and pineapple juice.

Pour into prepared pan and bake 350 degrees for 30-35 minutes. Cool 10 minutes in pan and invert onto serving platter.

When ready to serve, cut into squares and top each with a spoon of Cool Whip if desired.

NOTE: Can divide the recipe to accommodate 2 round or square baking pans, rather than 1 large one.
