Cranberry Cake with Cream Sauce
Ingredients
  • 3 Tbls. butter, softened

  • 1 c. white sugar

  • 1 egg

  • 1 c. milk

  • 2 Tbls. grated orange zest

  • 2 c. unbleached all-purpose white flour

  • 1 t. baking powder

  • 2 c. fresh cranberries, chopped

  • 1/2 c. white chocolate chips, optional

Cream Sauce
  • 1-1/3 c. white sugar or 1/2 c. brown sugar

  • 2/3 c. butter

  • 1 c. whipping cream

Instructions

Cream butter and sugar. Beat in egg.

Combine flour, baking powder and nutmeg; add to the creamed mixture alternately with milk.

Stir in cranberries and orange peel.

Pour into a greased and floured 9 x 9 inch baking pan. Bake at 350 degrees for 40-45 minutes.

Cream Sauce: Combine sugar, butter and whipping cream. Cook and stir over medium heat until heated through.

Cut warm cake into squares; serve with cream sauce.
