You can easily cut this recipe in half to make 4 small servings in mini jars
2 c. low fat cottage cheese (Daisy)
1 c. fresh raspberries
1/4 c. honey or maple syrup
1 t. vanilla extract
fresh raspberries and mint leaves for garnish
whipped cream, optional
In a blender or food processor, combine cottage cheese, raspberries, honey, and vanilla extract. Blend until smooth and creamy.
Spoon the mixture into serving cups or mini jars, refrigerate for at least 2-3 hours or until the mousse has set.
To serve, garnish with fresh raspberries and mint leaves before serving. A dollop of whipped cream is optional
