This is a creamy, refreshing and loaded with protein, low-calorie dessert.
You can easily cut this recipe in half to make 4 small servings in mini jars.
The chia seeds add extra nutritional value.
2 c. low fat cottage cheese (Daisy)
1 c. crushed pineapple, drained
1/4 c. honey
1 t. vanilla extract
2 Tbls. chia seeds, optional
dollop of whipped cream or TruWhip, optional
additional crushed pineapple, drained
shredded or flaked coconut
chopped pecans
In a blender or food processor, combine cottage cheese, crushed pineapple, honey, chia seeds (if using) and vanilla extract. Blend until smooth and creamy.
Spoon the mousse into custard cups or mini mason jars.
Chill in the refrigerator for at least 1 hour, ideally several hours, before serving.
Garnish with a dollop of whipped cream or TruWhip (optional), a small amount of crushed pineapple (drained), shredded or flaked coconut and chopped pecans
