Great with Mexican Dishes
See Notes below to bake plain corn on the cob.
1/4 c. butter, melted
2 Tbls. lime juice
1-1/2 teaspoons grated lime peel
1 t. chili powder
3/4 t. seasoned pepper
1/4 t. salt
4 medium ears sweet corn, cut into 3-inch pieces (if desired)
In a small bowl, combine the first six ingredients.
Place corn in a greased 13 x 9-inch baking dish. Brush corn with half the butter mixture.
Cover and bake at 400° for 30 minutes.
Uncover; brush corn with remaining butter mixture.
Bake uncovered for an additional 5-10 minutes or until tender.
