So good, you will think you are eating dessert for breakfast
3 eggs, separated
1-3/4 c. low-fat buttermilk (no substitutes)
8 Tbls. melted butter
1/2 t. vanilla
1/3 c. white sugar
1-3/4 c. all-purpose unbleached white flour
1-1/2 t. baking powder
1 t. baking soda
1 t. cinnamon
1/4 t. nutmeg
1/4 t. salt
whipped cream for serving
breakfast syrup, optional
3 Tbls. butter
6 Fuji apples, peels, cored, cut into 1/4" slices
1/2 c. white sugar
2 t. vanilla extract
1 t. cornstarch
1/2 t. cinnamon
1/4 t. nutmeg
For sauce: melt butter in a large Teflon coated fry pan, over medium heat. Add apples, sugar and spices. Cook about 18 minutes. Remove pan from heat and stir in 2 t. vanilla. Leave in pan until waffles are done, then pour into a serving bowl.
In a large bowl, whisk egg yolks, buttermilk, 1/2 t. vanilla and melted butter.
Combine dry ingredients and whisk into yolk mixture until smooth.
In a medium bowl, beat egg whites on high speed until stiff peaks form, about 2 minutes. Fold 1 cup whites into batter; carefully fold in remaining whites.
Preheat waffle iron. Brush with a little canola oil.
Pour 1/2 cup of batter onto waffle iron and close lid. Cook 5-6 minutes or until browned and cooked through. Repeat with remaining batter.
Serve with caramelized apples and whipped cream. Add syrup if desired as well.
