1 c. heavy whipping cream (see note below)
1 c. powdered sugar, divided
8 oz. pkg. low fat cream cheese
1/3 c. unsweetened cocoa powder, sifted
1 t. vanilla extract
fresh strawberries, washed (do not remove stems)
banana chunks
fresh raspberries, rinsed and dried
marshmallows
pretzel chips or pretzels
small skewers for forks for serving
In a mixing bowl, using an electric hand mixer, whip heavy cream until soft peaks form. Add 2 Tbls. of the powdered sugar and whip until nearly stiff peaks form. Set aside.
In a separate mixing bowl, whip together cream cheese, ¼ cup + 2 tablespoons powdered sugar, cocoa powder and vanilla extract until smooth. On low speed, mix in whipped cream mixture and ½ cup powdered sugar.
Transfer to a container and chill until ready to serve. Keeps for a week in the refrigerator
When ready to serve, arrange fruit and marshmallows (if using) on a tray with dip. Place a basket of pretzels along the side of the tray.
