4 boneless skinless chicken breast halves (8 oz. each)
4 thin slices deli Virginia baked ham
4 slices Swiss lace cheese
1 egg
1/2 c. milk
1 cup crushed cornflakes or croutons
1/4 t. garlic powder
1/4 t. salt
1/4 t. pepper
Flatten chicken to 1/4-inch thickness. Top each with a slice of ham and cheese. Roll up and tuck in ends, secure with toothpicks.
In a small bowl, whisk eggs and milk. In another bowl, combine cornflakes and seasonings. Dip chicken in egg mixture, and then roll in crumbs.
Place on a greased baking sheet.
Bake at 350 degrees for 45 minutes or until chicken juices run clear. Discard toothpicks before serving.
