Chicken: Chicken, Feta & Apple Salad
Ingredients
  • 3 (5 oz.) chicken breasts

  • 1/4 c. canola oil

  • 1 t. garlic powder

  • 1 t. onion powder

  • 1/2 t. salt

  • 1/4 t. pepper

  • 8 cups torn romaine lettuce

  • 1 small granny smith apple, cut in bite size pieces

  • sliced red grapes (about 1/2 to 1 cup, your choice)

  • 1/4 c. chopped pecans

  • 1/2 c. low-fat feta cheese, crumbled

White-Wine Vinaigrette
  • 1/4 cup white-wine vinegar or champagne vinegar

  • 1/2 c. canola oil

  • 3 Tbls. water

  • 1 pkg. (0.7 oz.) Good Season’s Italian dressing mix

Instructions

In a small bowl, combine the vinaigrette ingredients; whisk to mix well. Set aside or refrigerate until you are ready to assemble salad.

In a small bowl, combine the oil, garlic powder, onion powder, salt and pepper. Whisk to mix well.

Place the chicken breasts in a zip lock plastic bag and marinade at least 1 hour or up to 8 hours.

Grill just before serving. Let stand 5 minutes then slice into thin strips or bite-size chunks.

To assemble: Place the lettuce in a large salad bowl. Add the chicken, apples, grapes, pecans and cheese. Drizzle the dressing over the salad and serve immediately.

NOTE: Serves 4.
