3 (5 oz.) chicken breasts
1/4 c. canola oil
1 t. garlic powder
1 t. onion powder
1/2 t. salt
1/4 t. pepper
8 cups torn romaine lettuce
1 small granny smith apple, cut in bite size pieces
sliced red grapes (about 1/2 to 1 cup, your choice)
1/4 c. chopped pecans
1/2 c. low-fat feta cheese, crumbled
1/4 cup white-wine vinegar or champagne vinegar
1/2 c. canola oil
3 Tbls. water
1 pkg. (0.7 oz.) Good Season’s Italian dressing mix
In a small bowl, combine the vinaigrette ingredients; whisk to mix well. Set aside or refrigerate until you are ready to assemble salad.
In a small bowl, combine the oil, garlic powder, onion powder, salt and pepper. Whisk to mix well.
Place the chicken breasts in a zip lock plastic bag and marinade at least 1 hour or up to 8 hours.
Grill just before serving. Let stand 5 minutes then slice into thin strips or bite-size chunks.
To assemble: Place the lettuce in a large salad bowl. Add the chicken, apples, grapes, pecans and cheese. Drizzle the dressing over the salad and serve immediately.
