This has the most flavor when served at room termperature
2 c. cubed cooked chicken (or turkey)
1/2 dried cherries (or cranberries)
1/4 c. chopped sliced almonds (or pecans/walnuts)
1/2 c. chopped celery
3 green onions, sliced
lettuce or spinach leaves
freshly ground black pepper, to taste
1/2 c. low-fat mayonnaise (Kraft with olive oil)
1/4 c. plain yogurt
1 Tbls. fresh lemon juice
1/2 t. dried oregano
In a large bowl, combine chicken, cherries, nuts, celery and onions; mix well.
In a small bowl, combine mayonnaise, yogurt, lemon juice, oregano and pepper; pour over chicken mixture. Mix gently.
Refrigerate, covered 1-2 hours before serving. Season with additional oregano, salt and pepper, if desired.
Serve on lettuce or large spinach leaves.
