Amazing health benefits to Chia Seeds!
This pudding has the texture of tapioca.
The trick to thickening Chia seed pudding is to stir often, a few times after mixing, then refrigerating several hours or overnight.
1 c. fresh raspberries
1 Tbls. honey
1 t. pure vanilla extract
1 lemon juiced (3 Tbls.)
2 Tbls. low-fat plain Greek yogurt (Fage 2%)
1 c. almond milk (regular milk is fine)
1/4 c. chia seeds
whipped cream or whipped topping, for garnish
fresh raspberries, for garnish
In a food processor or blender, combine raspberries, honey, vanilla, lemon juice and Greek yogurt until blended; add milk and pulse to combine. Taste and add more sweetener (honey), if desired.
Transfer to a bowl and add chia seeds. Stir with a wire whisk to incorporate well. Let set for about 30 minutes in refrigerator and then give it a good stir. Repeat one more time, stirring again after 30 minutes.
Pour mixture into (5) mini jars with lids or small dishes.
Refrigerate covered overnight and enjoy in the morning, for a snack or even dessert. You can add a dollop of whipped cream and a few fresh raspberries, to garnish.
Will keep in refrigerator for 3-4 days.
