Cashew Rice Pilaf
Ingredients
  • 2 Tbls. butter

  • 1/2 c. diced carrots

  • 1/2 c. chopped onion

  • 3/4 c. uncooked long grain brown rice (Uncle Ben’s)

  • 1 c. golden raisins

  • 1-1/2 c. chicken broth

  • 1/2 t. onion powder

  • 1 c. frozen peas

  • 3/4 c. cooked wild rice (make ahead)

  • 1/2 c. cashews

  • 1-2 Tbls. thinly sliced green onions, optional

Instructions

Sauté butter, carrots, onions and uncooked long grain rice until tender; stir in raisins, broth and onion powder.

Bring to a boil, reduce heat, cover and simmer for 30 minutes or until liquid is absorbed and rice is tender.

Stir in peas, wild rice and cashews; heat through.

Sprinkle with sliced green onions before serving if desired.

NOTE: Serves 6.
