4 eggs
2 c. white sugar
1-1/4 c. canola oil
3 small jars of baby carrot food
1/2 c. walnuts, chopped (and some for on top)
2 c. unbleached all-purpose white flour
2 t. baking soda
2 t. cinnamon
1 t. salt
raisins, optional
6 oz. low-fat cream cheese
4 Tbls. butter
1 t. vanilla
3 c. powdered sugar
In a mixing bowl, beat eggs. Add oil, sugar, and baby food; mix in dry ingredients.
Pour batter into a greased and floured 10x15x2" bar pan and bake at 350 degrees for 25-30 minutes. Cool on wire rack.
With an electric mixer, beat frosting ingredients until fluffy and frost. Sprinkle a few chopped walnuts on top of frosting, if desired.
