Canadian Pancakes

These were a favorite when my boys were little. Nice change from traditional pancakes.
Easy and quick to make and so good!

Ingredients
  • 1 c. milk or low-fat buttermilk

  • 1 c. all-purpose unbleached white flour

  • 1/4 t. salt

  • 4 eggs

  • butter (for muffin tin)

  • syrup for serving

Instructions

Preheat oven to 425 degrees.

Mix all of the above in a blender.

Spray muffin tins with non-stick cooking spray.

Place 1/4 t. butter in each muffin cup. Put pan in oven to melt butter; remove pan once melted.

Pour mixture evenly divided into muffin cups (2/3 full).

Bake at 425 degrees for 15 minutes until puffed and golden. DO NOT OPEN OVEN DOOR WHILE BAKING, THEY WILL FALL.

Serve immediately with syrup.

NOTE: For a different taste add 1 t. cinnamon to batter or fresh fruit (grated apple or blueberries) Or, top with fresh fruit and add a little syrup along with.
