Romaine lettuce for 6-8 people, torn
red onion slices, optional
sliced mushrooms optional
grated carrot, optional
black olives, optional
chopped tomato, optional
1/4-1/2 c. freshly grated Parmesan cheese
Caesar-flavored or garlic croutons
6 Tbls. canola oil or olive oil
3 Tbls. + 1-1/2 t. red wine vinegar
1/8 t. dry mustard
1/2 t. Worcestershire sauce
1/4 t. salt and fresh pepper, optional
1 medium clove garlic, minced
Place lettuce in a large salad bowl.
Toss with red onion, mushrooms, carrot and black olives, if desired.
Dressing: Combine oil, vinegar, Worcestershire, dry mustard, salt and garlic in a blender and process until smooth.
Pour desired amount of dressing over lettuce.
Sprinkle with fresh pepper, Parmesan cheese and croutons.
Serve immediately.
